I add thin beet slices to boiling vinegar first, then return to boil.Then I add the onions, return to boil, remove from heat, and add ice cubes and salt.

Some folks don't boil their onions first. They simply boil the water, vinegar and spice mixture then pour the fresh onions and mixture into the glass jar and let it sit at room temp for about 30 min. Then they refrigerate. Would you consider your method the best?
